A working knowledge base for chefs, processors, and home cooks who want to extract maximum value from specialty mushrooms.
The Mushroom Culinary Guide (MCG) is built around three core categories — a per-species Taste/Texture/Nutrition breakdown, creative starting points for execution, and the operational protocols for handling and storage. Each category has a dedicated entry for all seven varieties we cultivate.
Three Categories
1. The Chef's Toolbox (Taste · Texture · Nutrition)
What each cultivar brings to the plate — the volatile compounds behind the taste, the hyphal structure behind the texture, and the whole-food nutrition.
2. Idea Starters (Gastronomic Analogs)
Per-variety culinary applications — center-of-plate analogs for poultry, marine proteins, scallops, crab, bacon. Not recipes; starting points for chefs who want to push past commodity mushroom thinking.
3. Handling & Storage (The Sous Team Protocol)
The non-negotiable rules for keeping our mushrooms at peak. Walk-in temps, the Zero-Water Directive, the Plastic Ban, the 100% Usable Yield Doctrine. Read this before your first delivery.
