The Marine Analog — Vegan Sea Scallops

Isolate the thickest, most uniform sections of the stem and reserve the caps for separate preparations. Slice the stem laterally into one-inch-thick medallions. Use a sharp paring knife to lightly score a crosshatch or diamond pattern into the flat faces of each medallion.

Briefly steep or braise the medallions in a plant-based dashi (kombu, white miso paste, water, tamari). Following the braise, remove, pat completely dry to prevent steaming, and sear aggressively at high heat in a cast-iron skillet with a mixture of neutral oil and butter. The interior remains incredibly juicy and tender, yielding a texture impossibly silky and functionally indistinguishable from a perfectly cooked Atlantic sea scallop.

The Mammalian Analog — The Pressed Steak

The solid mushroom block reduces effortlessly into long fibrous strands. Toss in olive oil, smoked paprika, and garlic. Roast in a high-heat oven (400°F for 20 minutes) or fry in cast iron.
