Snow Oysters are pure-white cascading clusters with brittle, delicate caps and no protective skin. Refrigerated but fragile — store cold, store high, and never crush.
The Zero-Water Directive
Never wash or submerge under running water. Water dilutes the natural umami, blocks the Maillard sear, and accelerates decay.
Dry Cleaning & Hand-Tear Only
Grown indoors in a sterile cleanroom, so it arrives clean — a soft-bristled pastry brush handles any particulate. The caps lack a protective epidermis and shatter easily; hand-tear along the longitudinal seams rather than cutting.
100% Usable Yield
The entire cluster is gastronomically viable. Separate gently by hand to preserve the petal-like caps; the tender stems are fully usable.
Storage Parameters
- Walk-in temp: 34–36°F
- Position: top shelf only — never stack other prep on top of the box
- Maximum hold: 48 hours
- Never: sealed plastic or vacuum bags
What Goes Wrong
- Crushing weight: other prep stacked on top collapses the delicate caps.
- Sealed plastic: trapped gases accelerate fermentation in fragile cells.
- Past 48 hours: structural integrity collapses — use promptly.
- Washing: brittle, skinless caps waterlog and shatter.
