Strain: Hericium erinaceus
Lions Mane is the most delicate variety we cultivate. Its spines are highly sensitive to environmental mishandling and atmospheric degradation. Handle this product like fresh sea urchin (uni) — even slight finger pressure causes immediate microscopic bruising that leads to brown oxidation spots and bitter flavors.
The Uni Mandate
Lift each Lion's Mane from the base only. Never grip or compress the spines. Treat with the same delicate discipline you'd apply to sea urchin tongues, foie gras lobes, or premium soft cheeses.
The Zero-Moisture Policy
This mushroom acts like an aggressive sponge and is highly susceptible to bacterial rot when exposed to excess moisture. Absolutely never wash or submerge this product. If particulate matter is present, use a dry paper towel or a soft-bristled brush to gently wipe the spines.
Breathable Storage (Strictly Enforced)
Lions Mane must never be sealed in airtight plastic containers or tightly wrapped in plastic film. Doing so traps respiratory gases and condensation, causing rapid fermentation and a slimy, unusable texture. Store in the walk-in cooler inside paper bags or slotted containers lined with dry paper towels to maintain crucial airflow.
Delayed Processing
For maximum structural shelf life, keep the mushrooms completely dry and whole until the exact moment they are ready to be broken down for service. Pre-cutting or hand-shredding before service exposes the porous fibers to oxidation and rapid degradation.

What Goes Wrong
- Compression bruising: Brown oxidation spots on the spines develop within hours of finger pressure.
- Plastic storage: Fermentation and slime within 24–48 hours.
- Pre-shredding for prep: Exposed surface area oxidizes and turns bitter. Hand-shred at the moment of plating.
- Washing: The mushroom acts like a sponge — once waterlogged, it never recovers structurally.
