Golden Enoki arrives as long, slender, golden-capped clusters with fibers running strictly parallel up the stem. That structure is the whole value — springy, al dente, noodle-like — and it is easily lost to moisture, crushing, or bruising. Handle it like a delicate fresh herb, not a button mushroom.
The Zero-Water Directive
Never submerge or wash under running water. The porous, sponge-like matrix instantly soaks up water, diluting umami and causing it to steam instead of sear or crisp. Our clusters are grown indoors in a sterile cleanroom and arrive clean.
Dry Cleaning Only
If minor substrate particulate is present, sweep it away with a soft-bristled pastry brush or a dry paper towel just before cooking. Do not rub — the caps bruise.
Handle Gently — Bruising Browns
Rough handling or crushing triggers enzymatic browning that darkens the golden tissue. Hold clusters by the base; when separating strands, hand-pull gently or slice cleanly at the very base to keep the parallel fibers aligned.

Breathable Storage (The Plastic Ban)
Never seal in plastic wrap, airtight containers, or vacuum bags — trapped gases and condensation cause rapid sliming. Store in the provided breathable box or a paper bag, ideally lined with a dry paper towel to wick surface moisture.

What Goes Wrong
- Washing or wet storage: the sponge-like fibers waterlog, steam instead of crisping, and slime quickly.
- Crushing weight: other prep stacked on top flattens the delicate clusters and browns the tissue.
- Sealed plastic: trapped condensation triggers fermentation and sliming within a day.
- Rough handling: bruising darkens the golden caps and stems.
