Fancy Oysters have a ~48-hour shelf life and a microscopic supply window. Each harvest day we cut whatever's at absolute peak — sometimes a single species, sometimes a mix. Pick your specific species below if you have a use case in mind, or select Farmer's Choice (Mixed) and we'll send whatever's most striking and structurally sound that day.
Species Profiles
- Pink Oyster (Pleurotus djamor) — thin, fragile, flamingo-pink caps. Savory, bacon-like aroma when seared.
- Golden Oyster (Pleurotus citrinopileatus) — neon-yellow clusters with bright citrus and cashew notes.
- Snow Oyster — creamy white caps with a mild, slightly anise finish. Subtle on the plate, versatile in cooking.
- Phoenix Oyster — classic oyster profile, structurally hardier than Pink or Gold. Most forgiving of the four in active cooking.
- Farmer's Choice (Mixed) — whichever species is at peak the day of harvest. May be single variety or a mix.
Why You Won't Find These at Sysco
Fancy Oysters have a ~48-hour shelf life. After that, the hyper-vibrant pigments fade and the delicate caps shatter. They physically do not exist in the commodity supply chain. You're buying exclusive visual real estate for your plate — at peak the day of harvest.
The Execution
Flash-fry whole clusters in 375°F oil for ~30 seconds for a structural lattice garnish — height, crunch, and color on crudo, wagyu, or composed salads. For Pink Oysters specifically: shred caps, toss with smoked paprika and a drop of maple, and hard-sear for a vegan bacon bit.
⚠️ Critical Cold-Chain Notice
- Pink Oysters: DO NOT REFRIGERATE. Tropical strain. Store ambient 55–60°F and use same day. A standard 34°F walk-in will cause thermal shock — grey, mushy, dead within hours.
- Golden / Snow / Phoenix: 34–36°F walk-in, top shelf only.
- All species: Execute within 48 hours of delivery for maximum visual impact.
