The Sous Team Protocol

The Fancy Oysters umbrella covers four species: Pink Oyster (Pleurotus djamor), Golden Oyster (Pleurotus citrinopileatus), Snow Oyster, and Phoenix Oyster. These are the most fragile payloads we deliver, with a ~48-hour shelf-life window and species-specific handling requirements.

⚠️ Critical — Pink Oyster Storage Exception

DO NOT REFRIGERATE Pink Oysters. They are a tropical strain. Store ambient at 55–60°F and use the same day. A standard 34°F walk-in cooler will cause immediate thermal shock — grey, mushy, dead within hours. This is the single most important handling rule for Fancy Oysters; train your entire sous team on it.

The Universal Rules (All Species)

The Zero-Water Directive

Never submerge or wash under running water. Introducing external water dilutes their natural umami, prevents Maillard reaction sear, and rapidly accelerates cellular decay (Fancy Oysters decay faster than any other variety we cultivate).

Dry Cleaning Only

Cultivated indoors in a sterile cleanroom. If minor particulate matter is present, use a soft-bristled pastry brush. Handle clusters by the base only — the caps and petals are exceptionally fragile.

The 100% Usable Yield Doctrine

The entire structural body of each species is gastronomically viable. Gently separate clusters by hand to preserve the beautiful, petal-like caps. The stems are incredibly tender and should be utilized entirely.

The Color-Shift Warning (Pink Oyster Only)

The vibrant pink color is thermally unstable. When heated, the caps undergo a chemical shift, transitioning from pink to a striking golden-brown. Plan plating accordingly — if you want the visual pink on the plate, use raw or briefly flash-fried.

Top-Shelf-Only Rule (Gold/Snow/Phoenix)

These three are the most fragile refrigerated payloads we deliver. They must be stored on the top shelf of the walk-in to prevent other prep items from crushing them. Never stack other product on top of a Fancy Oyster box.

What Goes Wrong

  • Pink Oyster in the walk-in: Thermal shock kills the cells within hours — grey and mushy. The #1 Fancy Oysters mistake.
  • Crushing weight: Other prep items stacked on top of a Fancy Oyster box collapse the delicate caps.
  • Plastic storage: Trapped gases accelerate fermentation in already-fragile cells.
  • Waiting past 48 hours: Hyper-vibrant pigments fade and structural integrity collapses. Use immediately.
